If you're like me, you love pancakes!! If you're like me you also try to limit your carbohydrate intake and increase your protein intake. In most cases it's tough to get the best of both worlds until now. I'll be honest, I've tried a few dozen times with very little success making pancakes with protein powder. Normally they burn too easily or come out too doughy.....until now. We figured it out!! Below is the recipe for the PERFECT, fluffy, low carb, high protein pancake!! Enjoy!
1 scoop of your favorite flavor of Nuts for Protein
1 cup of gluten free flour
1 1/3 cups of water
2 tbsp of honey
1/2 tsp of salt
1 tbsp of baking powder
1. Place all dry ingredients in bowl and mix together.
2. Slowly add in your honey and water. The mixture should be a little bit lumpy which allows it to become so fluffy!
3. Pour batter in a non-stick pan and cook until you notice the bottom of the pancake becoming a golden brown. Flip and cook on the other side until golden brown. Ours were about two minutes on each side. Of course, the time will depend on how big you choose to make them.
Of course you can add any toppings of your choice but these taste delicious as is! We love having these on hand to grab as we head out the door when we are in a rush.
